Sant Josep Fig

Sant Josep was introduced to the fig community by French fig-grower, Thierry, of Figues du Monde. It is still a rare variety outside of Ibiza. These Mediterranean figs grow to medium or large size. They have a long shape with a pronounced neck and can also look flattened. The neck usually starts with yellow skin, and the remainder of the figs is a pretty mix of green and purple color. Leaving Sant Josep figs to ripen for as long as possible is especially important with this variety for maximum flavor. Sant Josep can ripen on the later end of the season, and some have compared this to a Hivernenca type. Sant Josep becomes covered in lots of crackling as it ripens. The figs develop a concentrated flavor and jammy and syrupy texture as they hang on the tree. The red pulp has a complex sugar and berry flavor and a medium amount of seed crunch.

When do we ship cuttings?

Non-Rooted Cuttings(November/December):

We begin to ship cuttings once the trees are dormant and in a shippable state. Exact timing is weather dependent, but we usually start in November. Shipping continues throughout the winter and early spring. We stop shipping when the trees begin to break dormancy, normally around mid-March.

**All non-rooted cuttings ship between November and March regardless of the date selected during checkout. Orders placed during our pre-sale period(October/November) will ship out first in November/December. If you are rooting your cuttings in the spring, our cuttings can be kept in the refrigerator until you are ready to root them. They will be perfectly fine. That is what we do and they've turned into our most impressive trees.

Rooted Cuttings(Spring):

We begin shipping rooted cuttings once they are mature enough to ship. The shipping period typically begins late April and continues into June. Regardless of the date you select during checkout, we will ship when ready during that span. Please do not ask for ETA's or specific arrival dates. You will receive an email when your order ships with UPS Ground tracking details.
